About this work
A printed chart showing two halves of a lamb carcass hung vertically on a dark teal background, with numbered wholesale cuts and lettered retail cuts labeled on the meat. Text panels list the hind saddle, fore saddle, and percentage yields of each wholesale cut by carcass weight. The sheet is credited to the U.S. Department of Agriculture and dated 1948.
